1/2 cup brown sugar
1/3 cup granulated sugar
1 egg
1 tsp vanilla extract
1 & 3/4 cup flour
3 tbsp corn starch
1/2 tsp baking soda
1/4 tsp salt
2/3 cup semi-sweet chocolate chips (more for topping)
9 Halloween Oreo cookies
1/4 cup Halloween sprinkles
Instructions
Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a bowl, cream the slightly softened butter, brown sugar, and granulated sugar until smooth.
Add the egg and vanilla extract; stir until well combined.
Mix in flour, corn starch, baking soda, and salt until just combined.
Fold in chocolate chips and Halloween sprinkles.
Using a large cookie scoop (about 1/4 cup), flatten some dough in your hands. Place an Oreo in the center, fold the dough over it, and roll to seal.
Bake on the prepared sheet for about 10 minutes; they may look underdone but will firm up upon cooling.
Sprinkle extra chocolate chips on top while warm; let cool on the sheet for about 5 minutes before transferring to a cooling rack.
