  • 3 pounds boneless chuck roast (cut into 1-inch pieces)
  • 4 slices thick-cut turkey bacon (diced)
  • 2 large onions (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2 ½ cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 pound carrots (peeled and cut into chunks)
  • 1 ½ pounds Yukon Gold potatoes (peeled and cut into pieces)
  • Fresh thyme and parsley for garnish

Instructions

  1. Heat vegetable oil in a Dutch oven over medium-high heat. Cook diced turkey bacon until crispy; remove and set aside.
  2. Season beef with salt and pepper; brown in batches in the same pot. Set aside.
  3. Sauté onions until browned, add minced garlic, then stir in flour and tomato paste.
  4. Gradually pour in beef broth while scraping browned bits from the pot.
  5. Return beef and turkey bacon to the pot along with Worcestershire sauce, brown sugar, carrots, potatoes, and thyme.
  6. Bring to a boil, cover, reduce heat, and simmer for about two hours until beef is tender.
  7. Adjust seasoning if needed before serving hot with chopped parsley.
