  • 1 tablespoon avocado oil (for the grill)
  • 1/4 cup peanut oil
  • 1/4 cup soy sauce
  • 1 tablespoon garlic puree
  • 2 teaspoons ground ginger
  • 3 tablespoons lime juice
  • 1 tablespoon Sriracha Sauce (for glaze)

Instructions

  1. Trim and cut chicken into uniform chunks (2 inches).
  2. In a bowl, mix avocado oil, peanut oil, soy sauce, garlic puree, ginger, and lime juice.
  3. Marinate chicken in half the mixture for 6-8 hours.
  4. Preheat the grill to medium-high; clean and oil it.
  5. Create a glaze by mixing Sriracha with reserved marinade.
  6. Thread marinated chicken onto skewers.
  7. Grill kabobs for about 12-14 minutes, turning every few minutes while basting with glaze until cooked through (165°F internal temperature).
  8. Serve hot.
