  • 16 jumbo shrimp (shelled and deveined)
  • 1 medium hass avocado
  • ½ plum tomato
  • ½ lime
  • 2 tbsp red onion
  • 1 small clove garlic
  • 4 tostada shells
  • 1 cup shredded romaine lettuce
  • 1 cup canned fat-free refried beans
  • Salsa verde (for topping)

Instructions

  1. Soak skewers in water if grilling outside.
  2. Mash the avocado in a bowl and mix in diced tomato, lime juice, salt, pepper, cilantro, red onion, and garlic.
  3. Season shrimp with salt, crushed garlic, and salsa verde before threading onto skewers.
  4. Preheat grill or indoor grill pan on medium flame; grill shrimp for 1 to 2 minutes on each side until cooked through.
  5. Assemble each tostada by spreading refried beans first, adding lettuce and guacamole on top.
