4 peaches or nectarines
1 ball burrata
¼ cup olive oil
1 Tbsp red apple vinegar
1 tsp honey
¼ cup fresh lemon juice
6–8 cups mixed greens
¼ cup chopped pistachios or walnuts

Instructions
Slice peaches in half, remove pits, and brush with olive oil; season with salt and pepper.
