  • 1 chicken breast, grilled and chopped
  • 1 small sweet potato, cut into wedges
  • 1 cup broccoli florets
  • 1 ripe avocado, sliced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes and broccoli in olive oil, smoked paprika, salt, and pepper. Spread evenly on a baking sheet.
  2. Roast for 20-25 minutes, flipping halfway through until tender and slightly crispy.
  3. While veggies roast, grill or pan-sear chicken breast over medium heat for 5-6 minutes per side until golden brown. Let rest before chopping.
  4. In a bowl, layer roasted vegetables, topped with chopped chicken and sliced avocado. Add a sprinkle of pepper and a squeeze of lime or lemon if desired.
