  • Sweet potatoes, sliced into wedges
  • Smoked paprika
  • Avocado, diced
  • Cherry tomatoes, halved
  • Red onion, finely chopped
  • Fresh cilantro or parsley
  • Lime juice
  • Greek yogurt
  • Garlic (minced)
  • Fresh dill or parsley

Instructions

  1. Preheat your oven to 425°F (220°C). Toss sweet potato wedges with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. Season chicken with olive oil, garlic powder, paprika, lemon juice, salt, and black pepper. Grill over medium-high heat for about 6-7 minutes per side until fully cooked.
  3. In a bowl, mix diced avocado, halved cherry tomatoes, chopped red onion, herbs, lime juice, salt, and pepper to make the salsa.
  4. For the herbed yogurt dip, combine Greek yogurt with minced garlic, dill (or parsley), lemon juice, salt, and pepper.
  5. Assemble the bowl by layering grilled chicken over sweet potatoes topped with avocado salsa and a spoonful of herbed yogurt dip.
