  • 2 tablespoons honey (or maple syrup)
  • 1 tablespoon fresh ginger (grated)
  • 3 tablespoons unflavored vegan gelatin (or agar-agar)
  • 1/4 cup hot water

Instructions

  1. In a saucepan, combine the brewed green tea, fresh lemon juice, honey (or maple syrup), and grated ginger. Heat over low-medium until warm (not boiling) and stir until honey is dissolved.
  2. In a separate bowl, mix the vegan gelatin with hot water and whisk until fully dissolved.
  3. Pour the gelatin mixture into the saucepan with the tea blend and stir for about 2-3 minutes until well combined.
  4. Carefully pour the mixture into gummy molds without overfilling.
  5. Refrigerate the molds for at least 2-3 hours or until firm.
  6. Once set, gently pop the gummies out of their molds and store in an airtight container in the fridge for up to two weeks.
