  • 1/2 cup breadcrumbs
  • 1/4 cup chicken broth
  • 1 small onion, grated
  • 2 garlic cloves, minced
  • 1 large egg
  • 1/4 cup fresh parsley, chopped
  • Juice of 2 large lemons
  • 2 cups chicken broth (for sauce)
  • Olive oil

Instructions

  1. Soak breadcrumbs in chicken broth for 5–10 minutes until soft.
  2. In a mixing bowl, combine soaked breadcrumbs with ground meat, grated onion (remove excess moisture), minced garlic, egg, parsley, lemon juice, salt, and pepper. Mix gently and chill for 30 minutes.
  3. Form into uniform meatballs (about 1.5 inches).
  4. Heat olive oil in a skillet over medium heat; brown meatballs on all sides (5–6 minutes). Remove from skillet.
  5. In the same skillet, add more olive oil if needed; sauté garlic until fragrant. Add chicken broth and lemon juice; bring to simmer.
  6. Return meatballs to the pan; cover and simmer for 10–15 minutes until cooked through.
