  • ⅓ cup extra-virgin olive oil
  • ¼ cup lemon juice
  • 4 garlic cloves (minced)
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. In a small bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, kosher salt, and black pepper until well mixed.
  2. Place chicken thighs in a large bowl; pour marinade over them. Cover and refrigerate for 1 to 2 hours (up to 8 hours for more flavor).
  3. Preheat the oven to 350°F (180°C). Transfer marinated chicken to a baking dish and drizzle remaining marinade on top.
  4. Bake for 40 to 45 minutes or until the internal temperature reaches 175°F (80°C). For crispy skin, broil for an additional 2–3 minutes.
