  • 2 medium potatoes, peeled and diced
  • 1 tbsp butter
  • 1 tsp olive oil
  • Salt to taste
  • 23 tbsp milk or plant milk
  • 1 cup cucumber, sliced
  • 1 cup cherry or plum tomatoes, halved
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup arugula
  • 1 tsp lemon juice or vinegar
  • Salt & pepper

Instructions

  1. Season the chicken breast with salt, pepper, and optional garlic powder. Heat olive oil in a skillet over medium heat. Sear the chicken for 5-6 minutes on each side until golden brown and cooked through. Let rest before slicing.
  2. Boil diced potatoes in salted water until fork-tender (12-15 minutes). Drain and mash with butter and milk until smooth. Season with salt.
  3. In a mixing bowl, combine sliced cucumber, halved tomatoes, chopped bell peppers, and arugula. Drizzle with olive oil and lemon juice (or vinegar), season with salt and pepper, then toss gently.
