  • 5 oz dried red currants
  • 1/2 cup whole milk (lukewarm)
  • 2 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 3 cups all-purpose flour
  • 1 cup ground almonds
  • 1 tsp special occasion spice mix
  • 3/4 cup butter (softened)
  • 2 eggs (room temperature)
  • 3.5 oz candied citrus peel
  • 1 cup powdered sugar

Instructions

  1. Prepare the fruit mixture by soaking raisins and currants in boiling water.
  2. Activate the yeast by combining lukewarm milk, yeast, and sugar. Let it froth.
  3. In a large bowl, mix flour, ground almonds, special occasion spice mix, and remaining sugar.
  4. Combine dry and wet ingredients including the activated yeast mixture, butter, vanilla extract, and eggs until smooth.
  5. Drain the soaked fruit and fold it into the dough with candied citrus peel.
  6. Knead the dough until smooth and let it rise in a warm place covered for about 1-2 hours.
  7. Preheat oven to 350°F/180°C and line a baking sheet with parchment paper.
  8. Shape the dough into small balls (about 2oz each) and space them on the baking sheet.
  9. Bake for 15-20 minutes until golden brown; cool slightly before rolling in powdered sugar.
