  • 2 lbs extra large shrimp, peeled & deveined
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 2 small zucchini, sliced into 1" coins
  • 1 small yellow squash, sliced into 1" coins
  • 3/4 cup cherry tomatoes
  • 1/3 cup fresh basil, chiffoned

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, combine shrimp with minced garlic, smoked paprika, black pepper, parmesan cheese, and olive oil; toss until evenly coated.
  3. In another bowl, mix zucchini, yellow squash, and cherry tomatoes with olive oil and season with salt and pepper.
  4. Spread the shrimp and vegetables on a baking sheet in a single layer.
  5. Bake for about 12 minutes until shrimp are pink and opaque.
  6. Garnish with fresh basil before serving.
