  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 4 tbsp unsalted butter, divided
  • 2 oz cream cheese, softened
  • ½ tsp Italian seasoning
  • ½ tsp dried basil
  • ½ tsp crushed red pepper flakes, optional
  • Chopped parsley or herbs, for garnish

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente, about 10 minutes. Drain and set aside.
  2. Season chicken strips with Cajun seasoning, smoked paprika, salt, and pepper. Coat with Parmesan cheese.
  3. Heat olive oil and butter in a skillet over medium-high heat. Sear the chicken for 5-7 minutes until fully cooked; add garlic during the last minute.
  4. In the same pan, melt remaining butter, add garlic, then stir in heavy cream and chicken broth. Whisk in cream cheese and cheeses until smooth.
  5. Combine cooked rotini with the sauce in the skillet; toss to coat.
