  • 1 salmon fillet
  • 2 medium potatoes
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 garlic clove, smashed
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp honey or maple syrup
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden brown and crispy.
  2. In a skillet over medium heat, melt butter and add smashed garlic. Season the salmon with paprika, salt, and pepper; cook skin-side down for 4–5 minutes on each side until flaked.
  3. Steam baby carrots for about 5 minutes until tender; glaze with melted butter mixed with honey/maple syrup for an additional 1–2 minutes.
  4. Steam broccoli florets in a pot or steamer basket for 3–4 minutes until bright green.
  5. Assemble by plating the salmon alongside the roasted potatoes, glazed carrots, and steamed broccoli.
