  • 1 salmon fillet (150-180g)
  • 1 tbsp butter
  • 1 clove garlic, minced
  • 1 tsp olive oil
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 cup cooked white rice (jasmine or basmati)

Instructions

  1. Cook the rice according to package instructions. Fluff with a fork and keep warm.
  2. Pat the salmon dry and season generously with salt and pepper.
  3. In a skillet over medium heat, add olive oil and place the salmon skin-side down. Cook for 4-5 minutes until golden brown, then flip and cook for another 3-4 minutes until cooked through.
  4. Remove the salmon; melt butter in the same skillet over low heat, adding minced garlic until fragrant (about 30 seconds). Spoon the garlic butter glaze over the salmon.
  5. Serve the salmon on a bed of fluffy white rice, garnished with fresh parsley and a lemon wedge.
