  • 1 chicken breast, sliced
  • 1 cup cooked jasmine or basmati rice
  • 2 medium carrots, peeled and cut into sticks
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • Salt & pepper to taste
  • Chili flakes
  • Scallions
  • Drizzle of honey mustard or garlic aioli

Instructions

  1. Preheat the oven to 200C (400F). Toss carrot sticks in olive oil, salt, and pepper. Place on a baking tray and roast for 25–30 minutes until caramelized.
  2. Cook jasmine rice according to package instructions; keep warm.
  3. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Add seasoned chicken slices and cook for 5–7 minutes until golden brown.
  4. Assemble the bowl by layering rice, chicken, and roasted carrots. Garnish with scallions or chili flakes if desired.
