  • 1 tablespoon granulated sugar (for macerating)
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • ¼ cup vegetable oil
  • 2 large eggs, at room temperature
  • ¾ cup buttermilk, at room temperature
  • 1 ½ teaspoons vanilla extract
  • 1 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. In a small bowl, toss diced strawberries with granulated sugar and let sit for about 10–15 minutes. Drain well and toss with flour.
  2. Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  3. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, mix together sugars, melted butter, oil, eggs, buttermilk, and vanilla until smooth.
  5. Combine wet ingredients into dry ingredients gently until just mixed; fold in floured strawberries carefully.
  6. Pour batter into the prepared loaf pan and bake for about 55–65 minutes or until a skewer comes out clean.
  7. Allow to cool briefly before glazing with the mixture of powdered sugar, milk, and vanilla.
