  • ⅓ cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter, melted
  • 1 cup fresh peaches, peeled and diced (about 1 large peach)
  • Vegetable oil for frying
  • For the glaze: 1 cup powdered sugar
  • 23 tablespoons milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, salt until combined.
  2. In another bowl, mix the milk, egg, vanilla extract, and melted butter until smooth.
  3. Combine wet and dry ingredients; fold in diced peaches carefully.
  4. Heat about 2 inches of vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  5. Drop spoonfuls of batter into hot oil and fry for about 2–3 minutes on each side until golden brown.
  6. Drain excess oil on paper towels.
  7. For the glaze, whisk powdered sugar with milk and vanilla until smooth; drizzle over warm fritters.
