  • 10 tbsp packed light brown sugar
  • 1 egg
  • ½ tsp vanilla extract
  • 1 ¼ c all-purpose flour
  • 1 ⅛ tsp baking powder
  • ½ tsp ground ginger
  • ¼ tsp baking soda
  • ½ tsp kosher salt
  • ½ c whole milk buttermilk
  • 1 tsp orange zest
  • ½ c fresh cranberries (chopped)
  • c pecan halves (chopped)
  • 2 tbsp fresh cranberries (chopped)
  • 2 tbsp pecan halves (chopped)
  • 2 tsp sanding sugar

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with paper liners.
  2. Cream softened butter and brown sugar until smooth, then mix in the egg and vanilla.
  3. In a separate bowl, combine flour, baking powder, baking soda, ground ginger, and salt.
  4. Alternately add the dry ingredients and buttermilk to the butter mixture until just combined.
  5. Gently fold in orange zest, chopped cranberries, and pecans.
  6. Fill muffin liners two-thirds full with batter and sprinkle reserved cranberries and pecans on top.
  7. Bake for 10 minutes; then sprinkle with sanding sugar before baking for an additional 10-12 minutes until golden brown.
  8. Cool slightly before transferring to a wire rack.
