  • 1/4 tsp kosher salt
  • 1/3 cup powdered sugar
  • 1/2 cup cold unsalted butter
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup lemon juice
  • 2 tbsp lemon zest
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/4 tsp kosher salt
  • 2 large eggs
  • 4 large egg yolks

Instructions

  1. Prepare the Tart Dough: In a food processor, combine flour, powdered sugar, and salt. Add cold cubed butter and pulse until pea-sized. Mix in egg and vanilla until dough forms. Chill for at least an hour.
  2. Roll Out and Bake the Crust: Roll dough on a floured surface into a circle and fit into a tart pan. Prick the bottom with a fork; freeze for 20 minutes. Preheat oven to 350°F (180°C) and bake crust for 15–20 minutes until golden brown. Cool.
  3. Make the Lemon Filling: Heat lemon juice, zest, sugar, and butter in a saucepan until melted. Whisk eggs and yolks in another bowl, then temper with warm lemon mixture before combining back into the saucepan. Stir continuously until thickened.
  4. Assemble & Bake Again: Pour filling into pre-baked crust and bake for another 20 minutes until slightly jiggly in the center. Cool completely before slicing.
