  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons cornstarch

Instructions

  1. In a Dutch oven over medium-high heat, brown the beef pieces in oil for about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté onions, carrots, and garlic for about 4-5 minutes until softened.
  3. Add sliced mushrooms and cook until moisture is released and they start to brown (about 5 minutes).
  4. Return the browned beef to the pot and stir in beef broth, tomato paste, thyme, and rosemary. Bring to a boil.
  5. Reduce heat to low, cover, and let simmer for at least 1.5 hours or until the beef is tender. Stir occasionally.
  6. To thicken the stew, mix cornstarch with water until smooth; add while stirring continuously until thickened.
