  • 1/2 tbsp baking powder

  • 1/2 tsp cinnamon or pumpkin pie spice
  • 1/3 cup pumpkin puree
  • 1 egg (or flax egg)
  • Optional: Handful of mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a mixing bowl, combine almond meal, sugar, baking powder, salt, and cinnamon.
  3. Add pumpkin puree and an egg (or flax egg) to the dry mixture; whisk until well blended.
  4. Divide the batter among the greased muffin cups and sprinkle with chocolate chips if desired.
  5. Bake for about 10 minutes for mini muffins or 15 minutes for larger ones, until a toothpick comes out clean.
  6. Allow muffins to cool briefly in the tin before transferring them to a wire rack to cool completely.
