  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams shelled pistachios
  • 6 large eggs
  • 1 tsp baking powder
  • A pinch of salt

  1. Wash and boil the oranges in water for 30 minutes until soft; let cool.
  2. Blend cooled oranges into a smooth puree using a food processor.
  3. Add sugar, almond meal, ground pistachios, baking powder, and salt to the processor; blend well.
  4. In a separate bowl, whisk eggs until frothy; mix in the orange-nut mixture until smooth.
  5. Preheat oven to 180°C (350°F). Grease or line a 9-inch round cake pan with parchment paper.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
