  • 3/4 cup granulated sugar
  • 1/4 cup water
  • 14 oz can sweetened condensed milk
  • 12 oz can evaporated milk
  • 1 3/4 cups heavy whipping cream
  • 1 1/2 Tbsp vanilla extract
  • 5 large eggs (room temperature)
  • 1/4 tsp fine sea salt
  • Fresh berries for garnish (optional)

Instructions

  1. Preheat oven to 350°F; prepare a kettle of boiling water for the water bath.
  2. In a medium heavy saucepan, combine sugar and water. Boil until golden brown to make caramel; pour into a non-stick cake pan.
  3. Blend together condensed milk, evaporated milk, heavy cream, vanilla, eggs, and salt until smooth.
  4. Pour the custard mixture over the caramel in the pan. Cover with aluminum foil.
  5. Place the cake pan inside a roasting pan and fill the roasting pan with boiling water halfway up the sides of the cake pan.
  6. Bake for 70-80 minutes or until set with a slight jiggle in the center.
  7. Cool to room temperature, then refrigerate for at least six hours before serving.
