  • 240 g cream cheese or mascarpone
  • 225 g cold butter
  • 1 egg yolk
  • 260 g all-purpose flour
  • 70 g powdered sugar
  • 40 g cocoa powder
  • pinch of salt
  • 1L milk
  • 3 large eggs
  • 100 g cornstarch
  • 150 g brown sugar
  • 100 g butter
  • 170 g heavy cream
  • 200 g praliné paste
  • 200 g roasted hazelnuts
  • 100 g brown sugar
  • 20 g water
  • 50 g milk chocolate
  • 50 g liquid cream

Instructions

  1. Prepare the crust by mixing flour, cocoa powder, salt, powdered sugar, cold butter, and cream cheese until smooth. Add the egg yolk and form into a ball; refrigerate for 30 minutes.
  2. Preheat the oven to 180°C (350°F). Roll out the dough and line a tart pan. Bake for 30 minutes with weights and an additional 5 minutes uncovered. Cool.
  3. For the filling: whisk eggs with sugar and cornstarch. Warm milk gently and mix with egg mixture slowly to prevent cooking the eggs. Cook until thickened.
  4. Mix in butter, heavy cream, and praliné paste until smooth; pour into cooled crust.
  5. Bake at 180°C (350°F) for about 45-60 minutes until set but jiggly in the center.
  6. For caramelized hazelnuts: combine sugar and water over medium heat until caramelized; add hazelnuts to coat and cool on parchment paper.
  7. Prepare ganache by heating cream and mixing in chocolate until smooth; pour over cooled flan and top with caramelized hazelnuts.
