  • 100 g Greek yogurt
  • 3 small beets (or 2 medium)
  • ½ tablespoon olive oil, plus more for drizzling
  • ¼ lemon juice
  • Handful of chopped pistachios
  • Fresh dill, chopped
  • Date syrup
  • Apple cider vinegar

Instructions

  1. Boil the beets in salted water for about 20 minutes until tender. Let cool, then slice.
