  • 175 g dried apricots, chopped
  • 3 tablespoons apple juice (plus extra for brushing)
  • 175 g butter, softened
  • 175 g light brown sugar
  • 4 large eggs, beaten
  • 175 g plain flour
  • 225 g raisins
  • 225 g currants
  • 225 g cherries, halved
  • 1 tablespoon apricot jam, warmed
  • 500 g marzipan
  • 500 g ready-to-roll fondant
  • 30 ml apple juice

Instructions

  1. Soak the dried apricots in apple juice for about 15 minutes to plump them up. Drain any excess juice before adding them to your mixture.
  2. Preheat your oven to 160°C (320°F).
  3. In a mixing bowl, beat together the softened butter and light brown sugar until creamy.
  4. Gradually add in the beaten eggs while mixing well.
  5. Fold in the plain flour gently until just combined.
  6. Stir in the soaked apricots, raisins, currants, and cherries into your batter.
  7. Pour your batter into a greased baking tray.
  8. Level out with a spatula to ensure an even bake.
  9. Bake in the preheated oven for about one hour or until golden brown and a skewer comes out clean when inserted.
  10. Allow your cake to cool completely in the tray before transferring it onto a wire rack.
  11. Brush with warm apricot jam to help adhere marzipan.
  12. Roll out marzipan and fondant to cover your cooled cake beautifully.
