  • 1 cup powdered sugar
  • 1/8 tsp ground cinnamon
  • Pinch sea salt
  • 1/4 cup powdered sugar, for dusting towel

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. In a mixing bowl, combine flour, baking powder, baking soda, ground cinnamon, pumpkin pie spice, and salt. Whisk these dry ingredients until well blended.
  3. In another bowl, beat together eggs and granulated sugar until the mixture is pale and fluffy. Stir in pumpkin puree and vanilla extract until fully combined.
  4. Gradually add the dry mixture into the wet mixture. Use a rubber spatula to fold until just combined.
  5. Pour the batter into the prepared baking sheet. Spread evenly and bake in preheated oven for about 15 minutes or until a toothpick inserted comes out clean.
  6. Once baked, dust a clean kitchen towel with powdered sugar, carefully flip the cake onto the towel, and roll tightly with the towel from one end to another. Let it cool completely.
  7. In a mixing bowl, beat together cream cheese and salted butter. Add powdered sugar, vanilla extract, ground cinnamon, and a pinch of sea salt. Mix until smooth and creamy.
  8. Once cooled, unroll the cake gently. Spread an even layer of cream cheese frosting over the surface. Roll it up again without the towel this time. Refrigerate before serving for easier slicing.
