  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)

  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 tablespoons chives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, add butter and olive oil.
  3. Season sirloin cubes with salt and pepper and brown them for about 6-8 minutes.
  4. Add chopped onions and carrots; cook for another 4-5 minutes until softened.
  5. Sprinkle flour over the mixture, stir well, and cook for an additional 1-2 minutes.
  6. Pour in apple cider and beef broth; bring to a boil before transferring to an oven-safe pan.
  7. Cover and bake for 1 to 1½ hours until tender.
  8. While baking, boil potatoes until tender; then mash with milk, sour cream, cheddar cheese, and chives.
