  • 10.5 cups water or veggie broth
  • 1 yellow onion
  • 2 celery ribs
  • 3 carrots
  • 4 garlic cloves
  • Salt to taste
  • 1 cup pastina (or your favorite small pasta)
  • Grated parmigiano (for garnish)

Instructions

  1. In a large pot, heat water or veggie broth. Add onion, celery, carrots, garlic, and salt. Bring to a boil.
  2. Once boiling, reduce heat to medium-low. Cover semi-loosely and simmer for about 45 minutes until veggies are tender.
  3. Using a slotted spoon, transfer veggies to a blender with some broth and blend until smooth.
  4. Return blended mixture to the pot, stirring well.
  5. In a separate pot, cook pastina according to package instructions until al dente.
  6. Serve by adding pastina to bowls and ladling hot broth over it. Garnish with grated parmigiano.
