  • 2 Tablespoons olive oil (divided)
  • 1 pound ground turkey (or beef)
  • 1 cup chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic (minced)
  • 1 24 ounce jar spaghetti sauce
  • 1 quart beef broth
  • 1 15 oz can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon basil
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1 cup dry ditalini pasta
  • 1 15 oz can dark red kidney beans, drained and rinsed
  • 1 15 oz can great northern beans, drained and rinsed
  • Finely shredded Romano or Parmesan cheese for serving

Instructions

  1. Heat 1 tablespoon of olive oil in a large stock pot over medium-high heat. Add the ground turkey, breaking it into crumbles as it browns. Drain excess fat and set aside.
  2. In the same pot, heat another tablespoon of olive oil. Add chopped onion, diced carrots, and celery; sauté until onions are translucent (about 5–6 minutes). Stir in minced garlic and cook for an additional minute.
  3. Return the browned turkey to the pot along with spaghetti sauce, beef broth, diced tomatoes, and all spices. Bring to a boil; then reduce heat to low and simmer until vegetables are tender (15–20 minutes).
  4. Cook ditalini pasta according to package directions until al dente; drain.
  5. Add the cooked pasta and both types of beans to the soup. Allow to heat through for a few minutes before serving.
