  • 1 cup fresh lemon juice (about 56 lemons)
  • 1 tablespoon lemon zest (from about 2 lemons)
  • 1¾ cups sugar
  • 4 large eggs
  • ½ cup salted butter

Instructions

  1. Prepare a double boiler by filling a medium-sized saucepan with 2 inches of water and bringing it to a boil. Reduce heat to medium-low.
  2. In a heatproof mixing bowl, whisk together lemon juice, lemon zest, sugar, and eggs. Add cubed butter.
  3. Place the mixing bowl over the simmering water. Whisk continuously for 20-25 minutes until thickened (170°F).
  4. Strain the curd through a fine mesh sieve into a glass bowl.
  5. Cover with plastic wrap directly on top of the warm curd to prevent a film from forming.
  6. Allow cooling at room temperature before refrigerating for at least four hours or overnight.
