  • 3 medium carrots (peeled and diced)
  • 1 medium onion (peeled and diced)
  • 23 ribs celery (diced)
  • 1 medium red or orange bell pepper (finely chopped)
  • 23 cloves fresh garlic (finely chopped)
  • 1 teaspoon Italian seasoning
  • Salt and black pepper (to taste)
  • 7 cups low-sodium chicken broth
  • 1 can petite diced tomatoes (14.5 ounces)
  • 1 ½ cups Ditali pasta (or another small pasta shape)
  • 1 ½ cups fresh spinach (chopped)

Instructions

  1. In a large pot over medium-high heat, crumble and brown the Italian sausage until no longer pink. Transfer to a plate.
  2. In the same pot, add onions, carrots, celery, and bell pepper; sauté until softened, about 5-7 minutes. Stir in garlic, Italian seasoning, salt, and black pepper; cook for another minute.
  3. Return sausage to the pot; add chicken broth and diced tomatoes with juice. Bring to a boil then reduce heat to low; let simmer for 10-15 minutes.
  4. Stir in pasta; cook until al dente, about 10 minutes.
  5. Add spinach; cook until wilted, around 1-2 minutes.
  6. Serve hot with grated Parmigiano cheese and fresh basil.
