- 1 lb boneless chicken thighs (chopped)
- 1 large onion (diced)
- 1 carrot (chopped)
- 4 small russet potatoes (peeled and chopped)
- 3 cups chicken stock
- 1 tbsp vegetable oil
- 3 tbsp gochujang
- 3 tbsp soy sauce
- 3 tbsp garlic (minced)
- 1 tbsp white granulated sugar
- 1 tbsp sesame oil
- Chopped green onions for garnish
- In a small bowl, mix gochujang, soy sauce, minced garlic, sugar, and sesame oil until smooth.
- Heat vegetable oil in a large pot over medium heat. Sauté diced onions until translucent.
