  • 5 pounds chuck roast
  • 1/2 large white onion
  • 3 garlic cloves
  • 7 ounces chipotle sauce
  • 1 cup beef broth
  • 12 corn tortillas
  • 3 cups shredded Monterey Jack cheese
  • 1/2 tablespoon salt
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon cumin
  • 1/2 tablespoon dried oregano
  • 3 tablespoons avocado oil
  • 1/2 cup pico de gallo
  • 2 tablespoons cilantro
  • 2 small limes

Instructions

  1. Cut onion into chunks and mince garlic.
  2. Season the chuck roast with salt, garlic powder, onion powder, cumin, and oregano.
  3. Place seasoned beef in the slow cooker with onion, garlic, bay leaves, chipotle sauce, and beef broth.
  4. Cover and cook on low for about 4 hours until the meat is tender enough to shred.
  5. Remove cooked beef and shred it with two forks.
  6. Heat avocado oil in a skillet; briefly dip each tortilla in the broth before frying until golden brown.
  7. Fill each tortilla with shredded beef and cheese, fold, and fry until crispy on both sides.
  8. Serve hot with pico de gallo, chopped cilantro, and lime wedges.
