  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup (120g) chow mein noodles
  • 1 1/2 cups (250g) milk chocolate chips
  • 1 tbsp coconut oil or vegetable shortening (optional)
  • 1/2 cup (100g) milk or dark chocolate chips
  • 1 tsp coconut oil or butter (optional)
  • Pastel candy eggs (2–4 per cookie, depending on size)
  • Colorful sprinkles or nonpareils (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, cocoa powder, and salt. In a larger bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add the vanilla extract and egg, mixing until smooth. Gradually add the dry mixture to the wet ingredients, mixing until a soft dough forms.
  3. Scoop about 1 tablespoon of dough and flatten each into a 2-inch disk. Place on the baking sheet and bake for 8–10 minutes, or until the edges are set. Allow them to cool completely.
  4. Microwave the milk chocolate chips in 30-second increments, stirring after each, until smooth. Add a tablespoon of coconut oil or shortening if needed. Place the chow mein noodles in a large bowl, pour melted chocolate over them, and gently toss until every piece is fully coated.
  5. Scoop about 2 tablespoons of chocolate-coated noodles onto each cooled cookie base. Shape into a circular nest with a hollow center for filling. Let sit at room temperature for about 15 minutes to firm up slightly.
  6. In a small bowl, microwave milk or dark chocolate chips with coconut oil or butter until smooth. Spoon melted chocolate into each nest's hollow center about halfway full. Gently tap each cookie on the counter to smooth out the chocolate filling. Let cool completely until hardens; refrigerate for 10–15 minutes to speed up cooling if desired.
  7. Transfer melted chocolate to a piping bag fitted with a small round tip. Starting near each cooled cookie's center, pipe melted chocolate in circular motion to create raised nest shape with slight dip in middle. Let set at room temperature until firm; refrigerate briefly if necessary.
  8. Once hardened, gently press 2–4 pastel candy eggs into each nest's center. For extra decoration, sprinkle nonpareils or colorful sprinkles around edges of nests for that festive touch!
