  • 1/2 cup dill pickle juice
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 cup cheddar cheese (small diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons white onion (finely chopped)
  • Salt and pepper to taste

Instructions

  1. Cook elbow pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine the cooked pasta with dill pickle juice and let it sit for 5 minutes before draining again.
  3. In another bowl, whisk together mayonnaise, sour cream, Sriracha, salt, and pepper until smooth.
  4. In a serving bowl, mix drained pasta with cheddar cheese, sliced pickles, chopped dill, and finely chopped onion. Pour the creamy dressing over and toss until well combined.
  5. Refrigerate for at least 4-6 hours before serving to allow the flavors to meld.
