  • 8 Skinless Chicken Thighs
  • 1 Garlic Clove
  • 400 Coconut Milk
  • 2 Thai Yellow Curry Paste
  • 10 Fresh Coriander
  • 2 Limes
  • 500 Cooked Rice
  • 25 Crispy Fried Onions
  • Chilli Oil
  • 0.5 Sugar
  • Olive Oil
  • Salt
  • Black Pepper
  • 300 Water

Instructions

  1. Marinate the chicken by mixing it with grated garlic, oyster sauce, salt, and pepper in a large bowl; set aside for 30 minutes.
  2. In a saucepan over medium-high heat, sauté coriander stalks in coconut milk, then add curry paste and remaining oyster sauce until fragrant. Pour in water and remaining coconut milk; bring to boil and simmer for 10–15 minutes.
  3. Heat olive oil in a frying pan and cook marinated chicken until charred and cooked through.
  4. Taste and adjust seasoning with lime juice, salt, and sugar as needed.
  5. Serve over rice, topped with sliced chicken, crispy onions, and a drizzle of chili oil.
