  • 10.5 g active dry yeast
  • 312.5 ml warm milk
  • 37.5 g granulated sugar
  • 12.5 g salt
  • 312.5 g cold unsalted butter
  • 5 beaten eggs (for egg wash)

Instructions

  1. Activate the yeast by mixing warm milk and yeast in a bowl; let it froth for 5-10 minutes.
  2. In a mixing bowl, combine flour, sugar, salt, and activated yeast mixture; stir to form a soft dough.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth.
  4. Wrap in plastic wrap and refrigerate for at least 1 hour.
  5. Pound cold butter between parchment paper into a flat rectangle; chill if needed.
  6. Roll out chilled dough into a rectangle, encase butter in the center, fold, and roll out gently; repeat this folding process twice more.
  7. Shape croissants by cutting triangles from the rolled-out dough and rolling tightly from base to tip.
  8. Place on a lined baking sheet, cover, and proof until doubled (1-2 hours).
  9. Preheat oven to 200°C (400°F), brush croissants with egg wash, and bake for 15-20 minutes until golden brown.
