  • 4 cups chicken broth
  • 1/2 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 2 medium carrots (sliced)
  • 2 sticks celery (chopped)
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14 ounce) can diced tomatoes
  • 2 (9 ounce) packages refrigerated cheese tortellini
  • 2 cups fresh baby spinach
  • Salt & pepper to taste

Instructions

  1. In a skillet over medium heat, sauté the chicken sausage and chopped onion for about 7-8 minutes until browned.
  2. Stir in minced garlic and cook for an additional 30 seconds before transferring the mixture to your Crockpot.
  3. Add sliced carrots, chopped celery, crushed tomatoes, diced tomatoes, and chicken broth to the Crockpot.
  4. Cook on low for 6-8 hours or high for 3-4 hours. For quicker cooking, chop carrots finely.
  5. About 30 minutes before serving, add cheese tortellini and spinach to the Crockpot on high heat. Season with salt and pepper as needed.
