  • 2 (14.5 oz) cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup chopped yellow onion

  • 1½ tsp dried oregano
  • ¾ tsp dried thyme
  • 1 tbsp ground cumin
  • Lemon wedges

Instructions

  1. Prepare your ingredients by chopping the onion and garlic. Drain and rinse the white beans.
  2. Combine chicken breasts, white beans, chicken broth, chopped onion, garlic, salt, oregano, thyme, and cumin in the crockpot.
  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender.
  4. Remove cooked chicken and shred it with two forks before returning it to the pot.
