  • ½ cup water
  • 3 tbsp unsalted butter
  • ½ cup castor sugar (for sauce)
  • ½ cup unsalted butter (for sauce)
  • Thinly sliced orange peel (to taste)
  • ¾ cup orange juice

  1. In a mixing bowl, whisk together flour, sugar, and salt. Add eggs and vanilla extract; mix until smooth. Gradually stir in milk and water. Let rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly coat with butter. Pour about ¼ cup batter into the pan, swirling to spread evenly. Cook until lightly golden, about 1-2 minutes per side. Keep cooked crepes warm.
  3. For the orange sauce, melt castor sugar over medium heat until caramelized. Add butter and sliced orange peel; stir to combine. Slowly pour in orange juice while stirring continuously.
