  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Garnish: sliced green onions and sesame seeds

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add cubed chicken and sauté until golden brown and fully cooked, about 6-8 minutes. Remove chicken from the skillet and set aside.
  2. In the same skillet, add chopped onion, minced garlic, and diced red bell pepper. Sauté until softened, around 5 minutes. Stir in cubed pineapple and cook for an additional 2 minutes.
  3. Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper to the skillet. Bring to a boil.
  4. Reduce heat to low; cover and simmer for about 18-20 minutes until rice is tender.
  5. Return the cooked chicken to the skillet and gently stir everything together. Serve garnished with sliced green onions and sesame seeds.
