1 pound chicken breast, cubed
1 cup pineapple, cubed
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup jasmine rice
2 cups chicken broth
1 tablespoon soy sauce
1 teaspoon grated ginger
Salt and pepper to taste
Garnish: sliced green onions and sesame seeds
Instructions
In a large skillet, heat olive oil over medium heat. Add cubed chicken and sauté until golden brown and fully cooked, about 6-8 minutes. Remove chicken from the skillet and set aside.
In the same skillet, add chopped onion, minced garlic, and diced red bell pepper. Sauté until softened, around 5 minutes. Stir in cubed pineapple and cook for an additional 2 minutes.
Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper to the skillet. Bring to a boil.
Reduce heat to low; cover and simmer for about 18-20 minutes until rice is tender.
Return the cooked chicken to the skillet and gently stir everything together. Serve garnished with sliced green onions and sesame seeds.
