  • 8 oz pasta (penne, spaghetti, or linguine)
  • 1 cup finely chopped onion
  • 2 cloves garlic
  • 1 cup dry white grape juice or chicken broth
  • Fresh spinach

Instructions

  1. In a large pot over medium heat, add olive oil and chicken pieces seasoned with salt and pepper. Cook for 5-7 minutes until browned. Remove the chicken from the pot.
  2. In the same pot, sauté the chopped onion until translucent (about 3-4 minutes), then add minced garlic and cook for another minute.
  3. Add pasta and enough water or broth to cover; bring to a boil then reduce heat to simmer until al dente according to package instructions.
  4. Return cooked chicken to the pot, pour in grape juice or broth, and stir well. Cook for another 2-3 minutes until heated through.
  5. Fold in fresh spinach until wilted. Serve hot.
