  • 2 lbs salmon fillets
  • 3 Tbsp avocado oil
  • 1 cup yellow onion, chopped
  • 5 large cloves garlic, minced
  • 16 oz jar roasted red peppers, drained
  • 15 oz can full-fat coconut milk (or dairy-free alternative)
  • Optional: cherry tomatoes
  • Optional: baby spinach

Instructions

  1. Heat 2 tablespoons of avocado oil in a large skillet over medium heat. Season the salmon with sea salt, garlic powder, and paprika. Add salmon skin-side down to the skillet and cook until golden brown (about 4-5 minutes per side). Remove from skillet and set aside.
  2. In the same skillet, add another tablespoon of avocado oil. Sauté chopped onions until translucent (3-4 minutes), then stir in minced garlic and cook for another minute.
  3. Add roasted red peppers to the skillet along with coconut milk (or alternative) and season with salt. Blend until smooth using an immersion blender.
  4. Return salmon to the skillet, spoon sauce over it gently, and warm through for about 2-3 minutes. If desired, add cherry tomatoes and spinach during this step.
