  • 200g salmon fillet, skin removed and cut into chunks
  • 1 tbsp olive oil
  • 1 cup broccoli florets
  • 1 cup cooked white rice
  • 1 cup heavy cream
  • 2 tbsp basil pesto
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Cook the white rice according to package instructions. Keep warm.
  2. Steam the broccoli florets for about 4–5 minutes until bright green and tender-crisp. Set aside.
  3. In a skillet over medium-high heat, add olive oil. Season salmon with salt and pepper, then sear for 2–3 minutes on each side until lightly golden. Remove from skillet.
  4. In the same skillet, sauté minced garlic until fragrant, then stir in heavy cream and basil pesto. Let simmer for about 2 minutes until slightly thickened.
  5. Return the salmon and steamed broccoli to the sauce, gently tossing to coat evenly. Serve over fluffy white rice.
