  • 1/2 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. Cook the rigatoni in a large pot of salted boiling water until al dente (follow package directions). Drain and set aside.
  2. In a large skillet over medium heat, melt the butter. Sauté diced onion for about 5-7 minutes until translucent, then add minced garlic and cook for another minute.
  3. Stir in the pumpkin puree and mix well with the onions. Pour in the heavy cream and whisk until combined.
  4. Add salt, black pepper, ground sage, nutmeg, and brown sugar; let simmer for 2-3 minutes.
  5. Mix in freshly grated parmesan cheese until melted and smooth. Toss the cooked pasta with the sauce to coat evenly.
