  • 2 tbsp cream or Greek yogurt
  • Salt & pepper, to taste
  • 1 cup cooked basmati rice
  • 1 cup frozen peas and carrots
  • 1 tsp butter
  • Pinch of salt
  • Optional: chopped parsley

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat. Sauté sliced chicken until browned and cooked through, seasoning with smoked paprika, garlic powder, salt, and pepper. Stir in cream (or Greek yogurt) and let simmer for about 12 minutes.
  2. Steam or microwave frozen peas and carrots until tender. Toss with butter and a pinch of salt.
  3. Cook basmati rice according to package instructions; fluff with a fork.
