  • 2 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms (sliced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley (chopped)

Instructions

  1. In a mixing bowl, combine ground chicken, breadcrumbs, egg, Parmesan cheese, minced garlic, salt, pepper, and thyme. Mix gently until combined.
  2. Form small meatballs (about 1 inch in diameter) and set aside.
  3. Heat olive oil in a skillet over medium heat. Cook meatballs in batches for 5-7 minutes until golden brown on all sides. Remove from skillet.
  4. In the same skillet, add butter and mushrooms; sauté until browned. Add garlic and cook for another minute.
  5. Pour in heavy cream and chicken broth; stir to combine with mushrooms. Return meatballs to the skillet, season with Parmesan cheese, salt, and pepper. Simmer for 5-10 minutes until thickened.
  6. Garnish with chopped parsley before serving.
